Today we had a our first all-hands-on-deck creative meeting of the year: catching up with everyone post-holiday, introducing a new Jungalista to the team and brainstorming ideas for 2017. Now a Jungalow meeting isn’t a meeting unless there is colorful tasty food to follow, and today was no exception…
When Justina was a little girl, her favorite bagel combo was a blueberry bagel with strawberry cream cheese, so we decided to invent a few interesting sweet-bagel combos inspired by Justina’s childhood fave. We enjoyed sweet bagels in unusual combos all dressed up in yellow, orange, red and (of course) green.
Matcha Coconut Butter with Coconut Flakes on Poppyseed
¼ cup of coconut butter
1 tbs of matcha (add more to taste)
2 tbs of creamed honey
Stir all ingredients together. If needed, add a splash of hot water or coconut oil to make it easier to spread.
Makes 2-3 servings
Almond Butter with Apples on Whole Wheat
Plain Cream Cheese with Cranberry Sauce on Blueberry
Honeyed Cashew Cheese with Butternut Squash and Dukkah on Sesame
Dukkah comes from the Egyptian Arabic word for “to crush” or “to pound,” which is exactly how we made our little blend of spices, herbs and nuts – ground up with a tiny little mortar and pestle. There are a multitude of recipes out there to peruse, but we went with some ingredients already in our pantry…
1 tsp wild fennel seeds
½ tsp black pepper
½ tsp cumin
½ tsp sea salt
Sprinkle of oregano
Grind with mortar and pestle and sprinkle on whatever you please.
Makes 2-3 servings
Turmeric Cream Cheese with Candied Ginger and Black Pepper on Sesame
Turmeric Cream Cheese
¼ cup of plain cream cheese
1 tsp turmeric powder (add more to taste)
Stir ingredients together and voila!
Makes 2 servings
